Are you using Project64 2.3 maybe? Try right-clicking the specific game and choose properties.

Hi, I'm pretty sure this might be just me but I've really and I mean REALLY have been wanting to play SM64: Last Impact but when I open my Emulator (RetroArch, since I'm on Mac)
And after the title screen the Game Freezes I'm not sure why so can you help

Try mupen64 or try using project64 1.6 through wine.

In my opinion Wine, I don't like it, but do you know how to change ram from 4mb to 8mb on rertroarch

No, that's why I said to try mupen64 (which you won't need wine for) or project 64 (which you will need wine for). If you don't like wine and mupen64 doesn't work, try mono.
